Eggnog Pancakes


2 C. flour
1 Tbsp. baking powder
1/2 tsp. salt
1/4 tsp. ground nutmeg
2 eggs, lightly beaten
2 C. eggnog
1/4 C. vegetable oil

In a large bowl mix all dry ingredients. In a second bowl mix remaining ingredients. Stir eggnog mixture into flour mixture until slightly lumpy. Heat a greased griddle over medium heat. pour 1/4 C. batter for each pancake. Cook until golden. Turn when bubbles and edges are slightly dry. Makes 16 pancakes. I am dedicating this recipe to my Brother-In-Law Brad for his love of eggnog.
