APPLE MUFFINS WITH STREUSEL TOPPING

2 c. flour
1/2 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
3/4 c. milk/apple juice
1/3 c. vegetable oil
1 egg

Heat oven to 400°F. Line 12 muffin cups with paper baking cups.
In a bowl, combine flour, sugar, baking powder, salt, and cinnamon.
In another bowl beat the egg with a fork or whisk. Add milk and vegetable oil. Mix well. Wash and core 1 apple. Chop fine. Add to milk and egg mixture.
Stir wet and dry ingredients together. Stir only until dry ingredients are moistened. Over mixing causes toughness and tunnels.
Fill muffin cups 2/3 full. Sprinkle tops with streusel topping (see below).
Bake 18-20 minutes.


STREUSEL TOPPING:

1/4 c. brown sugar
1 tbsp. soft butter
1/2 tsp. cinnamon
1/4 c. chopped nuts or coconut (optional)

Mix all together, using a fork or spoon to combine ingredients. Sprinkle over the top of the muffins before baking.
Microwave directions: Line microwave safe pans with 2 paper cup liners. Fill muffin cups 2/3 full. Microwave on high power 1 minute. Rotate pan and microwave cook 1 to 1-1/2 minutes more or until toothpick comes out clean.
